Giga Projects and 120+ Global Companies Drive INDEX Saudi Arabia 2024
INDEX is the longest-running interiors event in the
Middle East, trusted by companies and brands to
deliver the quality and scale of audience that will
ensure an exceeded ROI for their business.
I
NDEX Saudi Arabia is the Kingdom’s leading
and largest interior design, furniture and fit-
out trade event where interior brands meet
interior designers, retailers, distributors and
fit-out contractors.
With Saudi Arabia’s Vision 2030 coming
to life, the rising number of real estate
projects for retail, commercial, hospitality,
and residential properties, along with
government initiatives to boost infrastructure, is
driving demand in the interiors market in Saudi
Arabia.
Giga projects such as Trojena, The Line, Sindalah,
Diriyah Gate, the Red Sea Development project,
King Abdullah Economic City, and others are
attracting various international and regional interior
and fit-out designers to work on the projects.
“Given the diverse range of interior design
projects fuelling demand, INDEX Saudi Arabia is a
perfect platform to forge invaluable connections,
strike lucrative deals, and stay at the forefront
of the industry,” confirms Jasmeet Bakshi, Vice
President of Design and Hospitality at dmg events,
which organizes INDEX Saudi Arabia.
This year’s edition of INDEX Saudi Arabia, is
packed with favorites and a number of new
features, including two conferences – INDEX Design
Talks and Workspace Summit (a new edition this
year, taking place for the first time in Saudi Arabia)
where over 120 speakers will share their wisdom in
specially curated sessions.
The INDEX Design Talks have become a
cornerstone of the regional design calendar in
recent years. Carefully curated to cover the biggest
topics and trends impacting the design community,
the program runs across all three days of INDEX
Saudi Arabia. The passionate industry community
of interiors, architecture, and fit-out professionals
attends the Design Talks for peer networking and
meaningful conversations.
Saudi Arabia’s initiative to entice international
businesses with its regional headquarters program
is gaining traction. Initiated in 2024, this ambitious
program incentivizes global corporations to
establish their regional headquarters in the
kingdom. Over 120 global companies were recently
allowed to move their regional offices to Saudi
Arabia in the first quarter of 2024, a staggering
477% increase from the previous year.
With the increase in companies setting up offices
in the Kingdom, The Workspace Summit is timed
perfectly to have discussions around the future of
these office spaces.
As Saudi Arabia unveils many high-end projects
that redefine opulent experiences, the demand
for premium interior products has surged to
unparalleled heights. In fact, the surge in demand
for luxury, traditional-style furniture is such that
it’s predicted over $3.2 trillion will be spent by the
end of this decade to develop the luxury tourism
infrastructure under Vision 2030, its ambitious
economic diversification plan launched in 2016.
The 2024 edition of INDEX Saudi Arabia reveals
the new INDEX Collection, a curated section
dedicated to premium interiors, furniture & décor
brands. Reserved for the world’s most esteemed
luxury brands, the INDEX Collection offers an
unparalleled opportunity to meet designers and
over 70+ brands that offer the finest in interior
design.
As Saudi Arabia’s interior design sector
continuously evolves and grows in response to
Vision 2030, there is an increased demand for
skilled designers across the country. To empower
the next generation of design leaders, dmg events
is introducing INDEX Saudi Arabia Future Stars this
year – a new competition dedicated to supporting
talented interior design and architecture students
across the Kingdom.

Godwin Austen Johnson Celebrates 35 Years in the UAE
Godwin Austen Johnson
has built a solid portfolio
of iconic projects and a
network of clients across
the Middle East and
North Africa region.
T
hirty-five years ago, Brian Johnson
was given the opportunity to
enter an international architectural
competition for the design of the
Dubai Creek Golf & Yacht Club as
a result of him being responsible
for the design of the Emirates
Golf Club a few years before when
he was managing partner of his
previous practice.
His design won the competition and he immediately
established an office in Dubai where he and his team
were kept busy on the Dubai Creek Golf Clubhouse
and the Creek Yacht Club. Shortly afterwards
Johnson was asked to design the Palm Tree Court
extension at the Jebel Ali Resort, and a number of
new commissions followed from there.
Johnson had originally designed the Dubai College
in 1978 with a previous practice and the school asked
him to take over the work again and this, combined
with work with Mirage Mille on the One&Only Royal
Mirage and the Bab al Shams Desert Resort, led to the
majority of the work in subsequent years being in the
hospitality and education sectors.
The firm has been the design firm of choice for
many distinguished projects over the years including
VIDA and The Palace Hotel and Residential projects,
Al Seef Dubai, an array of University and Cultural
projects for HH The Ruler of Sharjah as well as Dubai
College, Dubai Sports City, Arcadia Schools, The
Chedi Al Bait, Al Wathba Desert Resort & Spa in Abu
Dhabi and a range of other hotel projects throughout
the region including the Warner Bros Hotel, Abu
Dhabi, Jebel Ali Palm Tree Court, and the DoubleTree
by Hilton & Hilton Garden Inn Riyadh, many of which
have resulted in the firm winning a raft of design
awards.
Today, Godwin Austen Johnson is a team of 110
committed colleagues working on diverse projects
across the region from contemporary and traditional
hotels and residential towers to modern education
projects and large master planning projects.
In addition to the obvious milestones of successfully
completed projects over the past 35 years Godwin
Austen Johnson has established a number of internal
departments all of which actively complement the
architectural heart of the practice including a fully
functioning MEP team which has evolved over the
years to be one of the most highly regarded in the
region.
“I look back on the last 35 years of the practice with
immense satisfaction in what we have achieved and
the many talented colleagues who have worked with
us for many of the past three and half decades. I am
in the proud position of seeing colleagues either leave
us to set up their own businesses or being head-
hunted by other firms to take over senior roles in
international organisations.

vibrant hub, attracting local
and international thought
leaders and making Dubai a
global player in the design
world. It is a space where values
are challenged, ideas flourish,
ambitious collaborations are
born, and bold creativity is the
currency. As Dubai continues
to invest in distinctly modern
design leadership, it is poised to
become a significant influencer
on the world stage, providing
fertile ground for designers
to collaborate mindfully,
innovate, and ultimately create a
responsible, lasting legacy.
Design is a future skill that
is of value for all industries
and sectors, be that design as a
collaborator for driving radical
innovation, a creator to inspire
new ways of improving the
quality of life for people and the
planet or a catalyst to facilitate
changes in behaviours. As such,
as Dubai rapidly emerges as a
global design hub, it is crucial
to recognise and appreciate
the pivotal role of universities
in shaping the future of the
industry.
Educational institutions in
Dubai are at the forefront of
aligning design education with
industry needs and ensuring
that design graduates are
academically equipped to work
in traditional and emerging
industries. This alignment
is crucial because it links
university design studio learning
with real-world experience,
equipping students to make
meaningful contributions. One
of the primary ways universities
achieve this alignment is
through close collaboration
with industry professionals.
By fostering partnerships
with thought leaders from all
industries, governments, and
leading design firms, universities
ensure that their curricula
remain relevant and up-to-date
with the latest global industry
intelligence. These professional
collaborations allow students
to hone new knowledge and
skills by working on live briefs,
engaging in international
competitions, and gaining
insights into industry challenges,
expectations, language, and
mindset requirements.
Furthermore, universities
in Dubai are increasingly
incorporating interdisciplinary
approaches to design education.
They acknowledge that design
does not exist independently
and urge students to interact
proactively with other fields
like technology, business,
management, psychology,
and the sciences. This
interdisciplinary approach
gifts students a wider
perspective, empowering them
to address intricate design
issues creatively. For instance,
Heriot-Watt University
Dubai’s design education
offers students the flexibility
to tailor their studies across
multiple disciplines, fostering
a holistic understanding that
is in line with the demands of
the modern industry. The BA
(Hons) Communication Design
programme develops student’s
conceptual, creative, critical,
and technical skills, focusing on
achieving industry standards
of excellence. It addresses the
evolving demands of technology,
social media, and global
communication, emphasising
collaborative, socially dynamic,
and inclusive design.
The programme supports
learning in six key areas:
Graphic Design, Photography,
Illustration, Motion Graphics,
User Experience and User
Interaction Design (UX/UI).
The programme purposefully
engages with various
professionals annually, from
metaverse companies to banks,
global charity organisations, and
Identity and Brand Agencies.
Another key aspect is the
need to focus on sustainability
innovation. Dubai's vision of
becoming a global leader in
sustainable development is
reflected in the design education
offered by its universities.
Programmes increasingly
emphasise the importance of
NetZero and sustainability
practices, encouraging students
to think critically about their
work's social, economic, and
ecological impact. This focus
positions them as leaders in the
global movement toward more
responsible design. Universities
in Dubai also play a pivotal role
in nurturing entrepreneurial
skills among design students.
Recognising that creative
entrepreneurs will shape
the design industry's future;
institutions offer courses and
resources that equip students
with the tools to launch their
ventures. Incubators, coaching,
accelerator programmes, and
networking opportunities are
becoming integral parts of the
design education ecosystem in
Dubai.
Through collaboration
with industry professionals,
interdisciplinary approaches,
a focus on sustainability, early
embracing of new technologies,
and nurturing entrepreneurial
skills, these institutions prepare
the next generation of designers
to become active participants
in the industry's growth and
leave a lasting impact. As Dubai
continues to invest in design, it
is set to become a leader in the
global design world, fostering
new models of aesthetics,
excellence, and alliance.
Educational institutions in Dubai are at the forefront of aligning
design education with industry needs and ensuring that design
graduates are academically equipped to work in traditional and
emerging industries.

Can you walk me through your
journey in the real estate industry?
I have been involved in real estate
development for over 35 years. My career
spans across the United States and the
United Arab Emirates with projects in
commercial, residential, and hospitality
sectors. Prior to my position as Chief
Development Officer (CDO) at Ithra Dubai,
I had worked on various mega-projects,
including the Index Tower, and held

with One Za’abeel being a
shining example of what we’ve
accomplished.
For One Za'abeel, what did the
construction phase look like?
Were there any challenges?
Construction began in 2017,
with the aim of producing an
unparalleled icon of mixed-
use living in the heart of Dubai.
Bringing the vision of One Za’abeel
to life required our collaboration
with strategically-sourced local
and international industry experts

Due to its prime location, excavation
for the development occurred

What inspired the concept and

Sustainability, convenience, and
luxury are the core pillars of One

was to create the ideal homes for
discerning and contemporary global

Material Mastery
C
oco Chanel famously said,
“dress shabbily and they
remember the dress; dress
impeccably and they remem-
ber the woman.” The same
idea applies to the spaces we
inhabit. When the highest
quality materials are masterfully applied, the result
is unforgettable. Knoll furniture serves as the
crown jewel in any office, lobby, or home. Founded
in 1938, the company is celebrated worldwide
for its innovative collections produced with an
unwavering commitment to material excellence
and expert craft.
Swatch of excellence
The company’s pioneering approach to materiality
begins with one of the most ubiquitous symbols of
interior design: the fabric swatch. Florence Knoll
invented it. Other companies offered swatches,
but Florence—who was trained as an architect—
had hands-on experience in the importance of
understanding materials. Thus, Knoll became the
first company to mount squares of fabric to iden-
tification cards packed with information interior
designers need while working on projects. The
company’s evolutionary and revolutionary use of
materials goes beyond textiles. Knoll is recognized
worldwide for its innovative use of wood, marble,
and metal.
Mastery of marble
Like a couture dress made of the most luxurious
fabric, when Knoll uses marble, the cut is always
precise, and the application one-of-a-kind.
Grasshopper Tables by Piero Lissoni, as well as
collections by Florence Knoll, Eero Saarinen and
other designers are offered in an array of gorgeous
stones sustainably sourced from quarries in Italy
and Slovenia. A commitment to quality guides
everything Knoll does, which is why the company
uses only the highest quality marbles, chosen for
their favorable working qualities and containing
few geological flaws or voids. Finding quality
marbles isn’t easy, and fewer than 10% meet the
Knoll standard.
Determining where to cut marble to optimize
the highest quality and most beautiful portions of
the slab requires the expertise of highly qualified

stone masters, who analyze the veining
and patterns to determine the final cut.
Skilled artisans then hand-finish the edges
before applying the company’s signature
maintenance-free finish to create a durable,
nonporous surface that prevents stains.
Since 1958, Knoll has adhered to the strict-
est standards and time-honored techniques
for working with natural stone.
Proficiency with metal
Florence and Hans Knoll gave designers
free rein to experiment with the mediums of
their choice. This approach led to the design
of many notable products, including the
wire chair collection by Harry Bertoia, who
spent nearly two years experimenting with
and perfecting his technical proficiency in
metal before showing Florence and Hans
his chair. “When it came to rod or wire,
whether bent or straight, I seemed to find
myself at home,” said Bertoia.
Not only was Bertoia’s design innovative,
but because there was nothing else like it,
he also had to find a way to make it. Working
with Richard Schultz and Don Petitt, Bertoia
invented a production process—handbending
the rods, hand-weaving them into a frame,
and individually welding each one in place—
which is still how the Bertoia collection is
made today.
Ludwig Mies van der Rohe also excelled in
the innovative use of metal. When Florence
and Hans partnered with him to produce his
designs, they suggested a few changes based
on their materials expertise. For the Brno
Chair, which Mies originally made with a
tubular steel frame, Florence suggested they
also make a version with rolled metal to give
it a more refined look, like the Barcelona
Chair. Decades later, Knoll continues to
make both versions of the Brno Chair.
Florence and Hans Knoll knew they wer-
en’t just making furniture, they were creating
works of art. From Bertoia and Mies to works
by Marcel Breuer to Warren Platner, Knoll is
the leader in innovative metal works.
A sustainable and celebratory approach
to wood
From the beginning, wood has been a crucial
part of the Knoll DNA. From its first collections
by Danish designer Jens Risom—known for his
mastery of craft and Scandinavian approach to
materials—to its introduction of the industry’s
first all-wood office system in 1973, Knoll knows
how to combine the natural warmth and durabil-
ity of wood with clean, modern design.
Wood invites the outside in, bringing a sense of
well-being to interiors in ways unlike any other
material. Research has shown that wood is one
of the most beneficial materials for interiors in
how it influences the
psychological and physiological response to
space. Given all the benefits of this material it’s
even more crucial to protect it from overuse.
This is why Knoll has been a leader in envi-
ronmental action since 1978, when it began
implementing the clean technology initiatives
that have earned recognition from industry and
regulatory
agencies, including the EPA. All Knoll man-
ufacturing facilities worldwide are ISO 14001
certified, and the Forest Stewardship Council®
(FSC® C028824) ensures that Knoll products
bearing the FSC mark are manufactured with
wood from forests that protect environmental,
social, and economic values.

staying true
to local cultures. With over two decades of archi-
tectural expertise, Ignacio has been a driving force
in contributing to the Middle East's architectural
evolution since he made the region his home in
2006.
Ignacio's passion for architecture took root
at an incredibly young age, long before he even
understood what it meant to be an architect. His
father, involved in small real estate developments
in their hometown, would often bring him along to
meetings and site visits. Ignacio looks back in time
and says: “As a child, I found offices and meeting
rooms incredibly boring. But when my father took
me to an architect's studio, it was a revelation. The
drawing boards, markers, and cool gadgets made
it feel like a whole new world. I was amazed and
thought, ‘These people have the coolest job—they

impossible into reality. This dynamism is
what distinguishes this region, infusing
every project with an infectious energy and
determination.
He makes reference to the development
happening in the Middle East, including
UAE and Saudi Arabia, mirroring other
periods of intense growth. It's similar to
the architectural boom in New York during
the 1920s-1930s when iconic skyscrapers
reshaped the Manhattan skyline and pushed
the boundaries of what was possible. Over
the years, he has seen the region emerge
as a contender, challenging limits through
innovation and ambition. Today, the Middle
East is showcasing the transformative power
of visionary thinking, shifting the sources of
inspiration.
He understands that architects encounter
unique obstacles on a daily basis in a quickly
increasing industry with ever-changing
processes and communication. However,
there is an indisputable sense of being at the
centre of global activity—a feeling of hope
and excitement generated by some of the
world's best minds. “We're not simply devel-
oping buildings here; we're also contributing
to the region's wider story of innovation and
prosperity. Being engaged in such a dynamic
ecosystem, where the bounds of potential
are always extending and the future appears
unlimited, is an incredible privilege”.
Innovation Meets Timeless Quality
Ignacio is renowned for his innovative
approach, staying ahead of design trends
while ensuring that projects retain a timeless
quality. He achieves this by harmonising
traditional elements with contemporary
design, which requires a deep appreciation
for both. “At Aedas, we delve into tradi-
tional architectural practices to shape our
guidelines for the Middle East. Instead of
replicating old designs, we focus on the core
principles behind them, specific influences
and adapting to local conditions. Traditional
methods, such as determining room sizes
by wood beam lengths and using sun-dried
bricks, inspire us today. Despite having ac-
cess to modern materials and technologies,
we prioritize simplicity, logic and coherence.
Our goal is to create contemporary designs
that remain functional and true to their ori-
gins, avoiding unnecessary complexity while
preserving a clear architectural vision,”
He emphasises that respecting regional
culture is crucial in modern design and
explains, “At Aedas, we embed ourselves in
the local context by operating design studios
within the regions we work in, encouraging
the growth of local talent. Our team mem-
bers are both skilled architects and deeply
familiar with the local culture. This approach
ensures our designs are truly reflective of
and sensitive to their environment, unlike
designs created from afar.”
Balancing Technology and Humanity
As the world becomes increasingly tech-sav-
vy, Ignacio recognises that staying ahead
requires mastering these advancements.
At Aedas, he emphasises that people drive
innovation, with technology serving as a
powerful tool. He advocates for leveraging
technology effectively: “From generative
design to AI, VR, and 3D printing, we use a
range of technologies not just to automate
tasks, but to integrate them seamlessly into
our workflow. This approach enhances the
design process and delivers exceptional
value to our clients. It’s not the technology
itself that makes a firm cutting-edge, but
how we use it to encourage bold creativity
and experimentation.” However, being
tech-savvy doesn't mean Ignacio overlooks
the human aspect. He equally values how
technology can improve the lives of team
members, its primary users.
Key Trends Paving the Way for a Prom-
ising Future
He highlights key trends shaping the future
of architecture, with emphasises on the inte-
gration of advanced technologies like AI and
VR, which streamline design and enhance
collaboration. Additionally, he notes >>>
get to draw all day!’ From that moment, I
knew I wanted to be an architect.”
What started as childhood curiosity
evolved into a lifelong passion, and once he
became an established architect, there was
no looking back. His career has since been
marked by the successful completion of
high-profile projects, including SLS Dubai
Hotel & Residences, The Red Palace
Boutique Hotel and Trojena Ski Village,
amongst others.
From Challenge to Reality
Ignacio is truly amazed by how anything
seems achievable in this region. Despite
challenges such as tight timelines and
evolving briefs, there is an exhilarating
spirit that drives us to turn the seemingly
"WE'RE NOT SIMPLY DEVELOPING BUILDINGS HERE; WE'RE ALSO CONTRIBUTING TO THE REGION'S
WIDER STORY OF INNOVATION AND PROSPERITY. BEING ENGAGED IN SUCH A DYNAMIC ECOSYSTEM,
WHERE THE BOUNDS OF POTENTIAL ARE ALWAYS EXTENDING AND THE FUTURE APPEARS UNLIMIT-
ED, IS AN INCREDIBLE PRIVILEGE”.

the growing demand for culturally authentic designs that balance
tradition with modernity.
There are several key trends shaping the future of architecture,
with sustainability being one of the most significant. As environ-
mental awareness grows, clients and communities increasingly de-
mand buildings that are more eco-friendly and socially responsible.
Clients and architects are focussing on using sustainable materials,
incorporating energy-efficient systems, and designing for reduced
environmental impact. This shift reflects a larger movement toward
environmentally conscious development across industries.”
Another important trend that Ignacio refers to is the integration
of advanced technology into architectural practice. Tools such as
Building Information Modelling (BIM), virtual reality (VR), and
parametric design are transforming the way architects design,
visualise, and construct buildings.
He explains the inclusion of AI-driven design tools and algo-
rithms is also revolutionising the field. AI can analyse vast amounts
of data, provide design recommendations, and generate multiple
design options. This technology allows architects to streamline
workflows, optimize designs for efficiency and sustainability, and
collaborate more effectively with clients and other stakeholders.
By embracing AI, architects can deliver more innovative and
customised solutions.
Lastly, one of Ignacio's favoured trends, is the growing emphasis
on cultural identity and authenticity in architecture. Clients are
increasingly seeking designs that reflect their unique heritage and
traditions of their regions, while seamlessly incorporating moder-
nity and innovation. "This trend challenges architects to balance
traditional elements with contemporary needs, creating spaces that
honour local culture while meeting the demands of modern life.
In reflecting on the future of architecture, Ignacio feels a deep
personal connection to the evolving trends of technology, sustain-
ability and cultural authenticity. He dreams of a future where his
work and that of Aedas not only pushes the boundaries of design
but also deeply respects and reflects the rich cultural heritage of
the regions we serve. “I am excited about the potential to craft
spaces that are both innovative and rooted in tradition, and take
great pride in leading Aedas Middle East that is at the cutting
edge of these changes. Looking forward, I am filled with hope and
excitement about the positive contributions Aedas will make, and
feel honoured to be involved in a field that continually pushes the
limits of what’s achievable”.

villa’s elegance and sophistication,
making a bold statement of
grandeur and refinement
throughout the home.
The Crema Uno Marble,
combined with Light Emperador,
Yellow Siena, and Blue Azure,
has been crafted into a bespoke
marble water jet design by UR
DESIGNS. This unique art piece,
prominently featured in the villa's
main entrance, immediately
captivates visitors, showcasing
a blend of sophistication and
elegance right from the moment
you step inside. The marble theme
extends throughout the villa with
exquisitely designed columns
and stairs, each customised to
perfection. The intricately detailed
marble columns not only serve
as functional supports but also
enhance the grandeur of the
interiors with their robust elegance.
The stairs, masterfully carved
from Crema Uno and Light
Emperador marble, create a
seamless transition between levels.
These elements not only elevate
the visual appeal of the space but
also reinforce the villa’s overall
sense of luxury and refinement.
Not only in the flooring and stair
area, the marble continues to
decorate the walls of the villa with
a magnificent piece of one of the
finest marbles- Arabescato Orobico
book matches with lighting,
reflecting the durable nature of
marble which provides a distinctive
and luxurious feel to the villa.
In a classic villa, wood is crucial
for both its durability and aesthetic
appeal. The texture and richness of
the wood significantly enhance the
villa’s charm.
Every detail in this project
reflects meticulous craftsmanship,
including the solid doors adorned
with handmade golden brass
decorations for the main entrances
and gold leaf carvings for the interior
doors. These doors transcend their
functional purpose, >>>

Entrepreneur Jason Bassili unveils THREE CUTS on the rooftop of
Nakheel Mall, creating a buzz with its bold design and culinary innova-
tion, and setting new standards in Dubai’s hospitality scene.
W
hat inspired the design and aesthetic of the restaurant?
I didn’t want THREE CUTS to be just another steakhouse, I
wanted there to be creativity, personality, and soul to it. There
are many personal touches incorporated into the aesthetic,
largely influenced by my childhood. You’ll find my great-grand-
mother’s chair in the Speakeasy, and the material surrounding
the DJ booth was inspired by my rugby toiletry bag. The Bar’s
stained-glass backdrop draws inspiration from my high school
church, while the booth seating was inspired by one of our first restaurants in Beirut. I drew
a lot of inspiration from my years in London, mixing the traditional steakhouse concept with
the vibes of modern hotspots. The design itself inspired our tagline, The Art of Lazy Elegance,
creating an aesthetic, where old-school classic meets sophistication and simplicity, all under
one roof.
How does the design of the restaurant enhance the dining experience?
THREE CUTS’ design leans into our tagline of The Art of Lazy Elegance; the atmosphere is
both grandiose and cozy, casual yet fine. We set a warm tone and ambiance with soft light-
ing and soulful beats which encourages an extended dining experience. It invites guests to
unwind and relax into their home, where there’s no rush to simply eat and go home because
you somewhat feel like you’re there. Both the Bar and the Speakeasy were designed as focal
points for the post-dining experience, where people can gather, socialise, entertain, >>>

or simply enjoy the vibes. The aesthetic
and guest experience were both designed
to create a community feel that people
sense they are a part of, and keep coming
back to.
Are there any sustainable design elements
incorporated into the restaurant?
THREE CUTS was designed and con-
structed on a low power requirement. The
venue runs on very efficient power usage,
and we use recycled chilled water for all
air conditioning. The menu’s one-page
concept was designed with sustainability
in mind regarding both appearance and
offering. When it comes to our food, we
are as close to zero waste as can be.
What is the concept behind the restau-
rant’s menu?
The main goal behind the menu’s concept
was to curate a single page constructed
around simplicity. We aren’t reinventing
the wheel here, the vision was for people
to feel as though they were eating at home
with simple dishes, but zero compromise
on quality. We took the same to sourcing
the best ingredients and suppliers, and
narrowing
items down. Almost 40 different cuts of
meat were sampled to select the best three,
and we sourced our highest-quality salmon
from Le Fumoir. I wanted to simplify the se-
lection for my guests, rather than produce
a multiple-page menu where the concept
can get easily lost or confused - we took
care of that part for them, playing on the
theme of “3” to provide the paradox of
choice. We spent months on the process
until we produced a very well-focussed
menu on one page, every item being
something we love to eat ourselves.

The place is designed to make you feel at home and part of something special, time and time again.
THREE CUTS was designed and
constructed on a low power
requirement. The venue runs on
very efficient power usage,
and we use recycled chilled water
for all air conditioning.
Can you tell us about any unique or signature dishes that define your
restaurant?
THREE CUTS is an elevated steakhouse experience, so the emphasis
is placed on three cuts of meat: Striploin, Tenderloin, and Ribeye. The
Chef’s 3 Cut Special expands on this with three additional prime pieces
of meat, including the impressive Thor’s Hammer. The Raw Bar is pri-
marily prominent with the Seafood Tower, and Beef Tartare served with
lacquered egg yolk. Our concept is simple and is also our signature trait;
a one-page menu, high-quality ingredients, and serious flavour. We’ve
pulled from both tradition and modernity, pairing the classics with
creativity; simple dishes that pay homage to the old-school era, whilst
breaking the traditional mould.
Page 47
What trends in cuisine
do you see emerging
in the F&B industry and
how are you adapting
to them?
What stands out most to
me is that things are be-
coming overcomplicat-
ed, and slightly saturat-
ed. Venues are growing
more fussy, eager to be
“Instagrammable”, going
above and beyond with
lights, dry ice, and other
exaggerations. In my
opinion, it follows one
of two ways right now;
people are either seek-
ing a simpler form of
dining, or they are going
for dinner with a show,
live entertainment, and
so on. All of
this in turn is having
an impact on the cost
of dining. This was the
reason we decided to
take things back to a
simpler 0me with THREE
CUTS, creating a one-
page menu, sourcing
all the right ingredi-
ents and bold flavours,
old-school style yet still
keeping it up there with
entertainment.
How do you manage
peak times and ensure
smooth service during
high traffic periods?
I have operated fine din-
ing restaurants for the
past 20 years so there
is a lot to pull from the
past. Being multi-brand-
ed I’ve been very
experienced in building
teams over time, so we
have manned ourselves
well to deliver THREE
CUTS, which is our latest
venture. We crafted a
simplified and organised
menu that allows us to
manage high footfall,
and our reservations
system sets our max-
imum flow of guests
per hour, to ensure
optimum service at
all times. We fre-
quently analyse our
guest traffic to better
understand our cus-
tomers, their habits
and preferences, and
further see how we
can improve our-
selves.
What role does tech-
nology play in your
operations, from
reservations to kitchen
management?
We incorporate tech-
nology throughout our
entire operations, from
the generic systems that
handle reservations,
point of sales, and so on,
to the more specialised
ones. Our use of tech-
nology plays a vital role
in keeping us aligned
with our core concept
of high quality, assist-
ing with streamlining
everything from mon-
itoring inventory, food
safety, nutritional as-
pects, ordering manage-
ment, and beyond. We
utilise our own internal
program for member-
ships, recognising repeat
customers, consumer
habits, average spend-
ing, reviews, and trends,
enabling us to reward
our loyal guests. We also
use AI software for our
music, creating different
playlists from lunch, to
happy hour, to dinner,
ensuring every track
played matches the vibe
on any given
day/time, without re-
peated songs.
How has the F&B
industry evolved in
recent years, and what
changes do you foresee
in the future?
I have been based
in Dubai since 2004
and we have seen an
erup0on of new con-
cepts all over the city.
There are many, many
restaurants flooding the
market, and whereas
before fine dining was
geo-located in one cer-
tain area, today you can
find anything on every
side of the city. As Dubai
has exponentially grown
over the years, so have
the communities and
neighbourhoods; peo-
ple are generally dining
closer to their local are-
as to avoid cross-coun-
try trips or heavy traffic.
I anticipate these trends
to keep growing for
the meantime as Dubai
continues. establishing
itself as a serious, glob-
al, and diverse dining
destination.
Technology seamlessly integrates with design, enhancing every detail of the
experience. Innovation and comfort blend to create a space that feels both
advanced and welcoming.

What inspired Chef Tim Newton to create the "La Niña
Experience," and how does he blend traditional Iberian
cuisine with Latino spices?
Chef Tim Newton was inspired to create the "La Niña
Experience" to celebrate and elevate the rich culinary
traditions of Iberian cuisine while infusing it with
vibrant Latino spices. His approach highlights seasonal
ingredients, focusing on their peak freshness and flavour.
The menu is designed for sharing, reflecting communal
eating traditions from Spain, Portugal, and South America,
thus enhancing the social dining experience. Chef Newton
skillfully merges traditional Iberian techniques with Latino
spices, incorporating ingredients like cilantro, poblano
peppers, or pineapple into classic Iberian dishes. This
fusion results in a harmonious blend that respects the
essence of both cuisines while offering a unique and

What was the initial vision behind
designing the atmosphere and decor
of La Niña, and how does it resonate
with Spanish culture?
The vision behind La Niña’s design
was to transport guests to Spain
or Portugal, creating an immersive
experience that feels like a journey
during a meal. The decor reflects
Spanish and Portuguese culture
through its use of traditional
elements and aesthetic details,
enhancing the sense of travel and
authenticity.
What makes the "La Niña
Experience" a unique dining option
in Dubai's culinary scene, especially
for those seeking a personalised and
adventurous dining experience?
The "La Niña Experience" stands
out for its unique fusion of Latino
and Iberian cuisines, a combination
not yet seen in Dubai before
La Niña opened its doors. This
innovative approach offers a
personalised and adventurous
dining experience, setting it apart
from other options in the city's

the perfect scenario also for our
staff, where the chef can come up
with different menus depending on
their creativity and the seasonal
availability of ingredients, ensuring
a dynamic and ever-evolving dining
experience.
Are there any interactive elements
of storytelling aspects incorporated
into the dining experience that
enhance guests' engagement with
the food and its cultural origins?
Yes, there are interactive and
storytelling elements in the
dining experience. For instance, a
dish like the Locrio is presented
as the Latino version of paella,
incorporating Dominican
ingredients to highlight the cultural
connections and enrich the guests'
engagement with the food’s origins.
What trends or innovations do you
foresee shaping the future of the
F&B industry, and how are you
preparing for them?
Future trends in the F&B industry
include the rise of robotics and
digital kitchens, as well as a shift
towards finding a replacement for
the electrical energy while also
trying to find a source like the gas
which is the preferred by the chefs.
Additionally, there is a growing
emphasis on vertical farming to
reduce reliance on imports. In
response, we are exploring ways
to integrate these innovations,
such as investing in local vertical
farming projects and adapting to
technological advancements in
the kitchen. The clear example is
Abu Dhabi with many companies
who started farming mushrooms
and similar products where the
flavour is practically identical to
what we would find in an imported
ingredient.
The vision behind La
Niña’s design was to
transport guests to Spain
or Portugal, creating an
immersive experience
that feels like a journey
during a meal.
