JUNE 2023 | HOTELNEWSME.COM EDITOR’S NOTE HCNME A s we reach the midpoint of 2023, I can't help but reflect on how eventful it has been. Self-reflection is important, but it's crucial to strike a balance and avoid being overly critical of ourselves and our current circumstances. One of my main goals for this year was to travel more, prioritize my leisure time as much as my work time, and explore new interests and hobbies. I'm pleased to say that I've made significant progress in each of these areas. Moving forward, I want to continue focusing on the things that bring me fulfillment and dedicate more time to learning and honing my skills. It's no secret, but it bears repeating: while staying busy and keeping things moving is necessary, taking breaks to pursue new experiences or invest in what truly matters can instantly reignite creativity and joy. When channeled effectively, these moments can lead to personal growth. Over the past few months, our publication has also embarked on an incredible journey of growth too. We have fearlessly embraced new opportunities, introducing exciting additions to our agenda and making bold moves that have propelled us forward and expanded our reach to every region. This year, we took our Leaders in Hospitality Awards on the road, starting with Saudi Arabia as our first stop. Most recently, we had the pleasure of hosting a successful event in Doha, Qatar. It was a night to remember as the entire hospitality industry came together from all corners of the country, fostering connections, celebrating achievements, and honoring their peers. Witnessing our brand extend its reach, grow, and become fully immersed in the Middle East is a truly gratifying experience. We are genuinely excited to get to know each and every one of you and your businesses. Our goal is to support, collaborate, and share your success stories. Thank you for giving us the incredible opportunity to do so. In this issue of HCNME, we are delighted to announce the hospitality leaders of Qatar. Through the following pages, you will have the chance to meet some of the exceptional individuals who tirelessly contribute to making Qatar's tourism one of the finest in the region. You will also find inspiring leadership stories from the region's most prominent hotel groups and discover the talents of your favourite local chefs. As always, we hope you thoroughly enjoy reading this edition! SEYMONE L MOODLEY EDITOR-IN-CHIEF seymone@bncpublishing.net Unleashing Growth Seymone Leigh Moodley seymonemoodley

JUNE 2023 | HOTELNEWSME.COM W hen I had the idea for this column, I was actu- ally doing just that: Waiting for the train. A night train, to be precise, which would whisk me from one country to another and would see me embark in my destina- tion city’s centre just in time for breakfast with an old friend. I like trains. I have always liked trains. Sure, I’ve flown hundreds of flights, but even the finest business class flight can’t compare to first class train travel. On a train, the seats are wider and so are the corridors. You can get up without the fear of getting stuck behind the drinks trolley while a chap orders an entire mini- bar. You can walk to the restaurant car or the bar and have a meal or a drink you like. You don’t have to be there 2-3 hours before departure, and it doesn’t take you ages to get from an airport into the city. You ar- rive and you’re bang in the middle of whatever action it is your destination has to offer. One of the greatest things is to take the night train to Venice and embark just steps away from St. Marcus Square, leave the station, rub your eyes, and go “Ah! Venice!”. Relatively soon, if recent media features are to be believed, you’ll be able to do that in Dubai, too. Hop on a train, enjoy, step out and go “Ah! Riyadh!”. Well, it doesn’t have the same ring to it as Venice, but the principle is the same. Train travel is coming to the GCC and both, the KSA and the UAE government, recently announced that, regular trains aside, there will be special luxurious trains for scenic routes and traveling in style. Think Dubai Metro Gold Class, but tons better. Right, you might say, but where’s the connection to hotels and restaurants here? Having a hotel close to the airport was yester- day. Tomorrow’s hotel should be close to the cen- tral train station. Running a restaurant? You’ll want a branch in or just outside a major train station. A contact of mine, who runs an expanding fast-food franchise in Europe, has just completely changed strategy from expanding via malls to growing via train stations. It makes sense, because at least in Europe, there are more train sta- tions than malls. Additionally, we all know the hotel chains that have private jets and yachts. One of them rhymes with “Hive”, the other one doesn’t really rhyme with anything useful. Once we have a GCC-wide rail network, will we see hotel chains creating private trains? Will the GCC rail network be connected to Interrail? If so, let’s prepare for an influx of backpackers. Mostly, though, I think train travel will really boost tourism in many GCC countries. There’s currently TRAIN TRAVEL IS COMING TO THE GCC BY MARTIN KUBLER, CHIEF SLOTH AT THE GLUTTONOUS SLOTH, HORECA CONSULTING WITH ATTITUDE Running a restaurant? You’ll want a branch in or just outside a major train station. HCNME POINT OF VIEW
HOTELNEWSME.COM | JUNE 2023 TRAIN TRAVEL IS COMING TO THE GCC very little incentive for someone who spends a week in Dubai to fly to Doha for a day or even further to Riyadh. Once trains are an option, people will think about the scenic journeys that await and the luxury that abounds on such long-distance lines. For others, it’ll mean a quicker connection to friends and families in other parts of the GCC. Standard train travel is often cheaper than flying and indefinitely more comfortable than taking a bus. It feels like the arrival of trains in the GCC is going to open the next chapter of tourism and that’s not even looking at it from a sustainability angle (which most regional govern- ments increasingly do). It’s a matter of hassle-free traveling. Think taking the Eurostar from London to Paris. Sure, boarding takes slightly longer now that the UK isn’t in the EU anymore, but it’s still only a fraction of an airport check-in. The GCC is lucky in that the coun- tries are building the most modern railroads currently possible, so high- speed connections will be the standard. I recently took a train from Munich to Berlin – a distance not too dissimilar to traveling from Dubai to Doha. It took 4 ½ hours. I had WIFI. I had legroom. I was able to order my favourite food right to my seat at a time of my choos- ing. And it was 3 hours faster than taking the car and about an hour faster than taking the plane. I firmly believe that with an expand- ing GCC rail network, we’ll see more hotels and restaurants pop up in places that are currently underserved and, because there’ll surely be more train stations than airports in the region at some stage in the future, that’s a business niche worth looking into and adapting to. “THERE’S CURRENTLY VERY LITTLE INCENTIVE FOR SOMEONE WHO SPENDS A WEEK IN DUBAI TO FLY TO DOHA FOR A DAY OR EVEN FURTHER TO RIYADH. ONCE TRAINS ARE AN OPTION, PEOPLE WILL THINK ABOUT THE SCENIC JOURNEYS THAT AWAIT AND THE LUXURY THAT ABOUNDS ON SUCH LONG- DISTANCE LINES."

JUNE 2023 | HOTELNEWSME.COM COVER STORY HCNME Azar Saliba, the General Manager of Jumeirah Al Naseem, leads from the forefront of this prestigious hotel within the Jumeirah Group. His journey with Jumeirah began when he joined as the director of rooms at Jumeirah Beach Hotel. Recognising his exceptional talent and unwavering dedication, he swiftly ascended the ranks, assuming the general manager role for Jumeirah Al Qasr and Jumeirah Dar Al Masyaf. Azar took on the significant responsi- bility of general manager at Jumeirah Al Naseem, bringing his expertise and leadership to this esteemed property. Throughout his time with Jumeirah, Saliba has consistently demonstrated his unwavering commitment to excel- lence and a deep understanding of the hospitality industry. His extensive ex- perience and proven track record make him a valuable asset to the Jumeirah brand. We had the opportunity to speak with Azar about his successful career in the hospitality industry and the achievements of Jumeirah Al Naseem thus far. Azar's hospitality journey started dur- ing his early years when a profound wanderlust for exploring the globe took hold. This interest in travel guided his aspirations to build a career in the dynamic realm of hospitality. "With an eager spirit, I embarked on my expedition in the front office, eagerly delving into various facets of the hotel industry, eventually leading me to discover my distinctive niche within the expansive world of hospitality. This professional journey has moulded me into a seasoned hotelier, enriched by an array of experiences and an unwavering commitment to pursuing excellence. I consistently remind my team that, just as I started at the front office and ascended to the position of a General Manager, they too can achieve the extraordinary if they wholeheartedly dedicate themselves to the goal." Dubai's vibrant and captivating tour- ism and hospitality sector is unlike anything else, and Jumeirah Hotels & Resorts' remarkable legacy and integral role in shaping this landscape caught Azar's attention. "Jumeirah felt like a natural fit. My journey started in 2008 as Director of Rooms at Jumeirah Beach Hotel. This position saw me take responsibility for the smooth running and operations of guest services, res- ervations, and concierge, among other departments. After succeeding in my first role, I was promoted to Executive Assistant Manager of Rooms before transitioning to Resident Manager. “TODAY, IT STANDS PROUDLY AS A PINNACLE OF LUXURY HOSPITALITY, WITH 13 EXCEPTIONAL PROPERTIES IN THE UNITED ARAB EMIRATES, INCLUDING BREATH TAKING BEACHFRONT HOTELS AND DISTINGUISHED CITY ESTABLISHMENTS."
HOTELNEWSME.COM | JUNE 2023 FUELLED BY PASSION I spent a year assisting the General Manager at the ultimate family destination. In 2010 I worked at Bab Al Shams Desert Resort and Spa. Then in 2011, I lent my expertise to Jumeirah Creekside Hotel during the pre-opening phase. By 2012 I was appointed Hotel Manager of Jumeirah Mina A'Salam, the first hotel to open at Madinat Jumei- rah in 2003, and a leader in the world of luxury travel. After successfully running the day-to-day manage- ment of Jumeirah Mina A'Salam, I joined sister hotels Jumeirah Al Qasr and Jumeirah Dar Al Masyaf as Hotel Manager in 2013. I was later promoted to General Manager in 2015. And I am privileged to be the General Manager of Jumeirah Al Naseem today, a property that completed the Madinat Jumeirah tetralogy." At Jumeirah Al Naseem, Azar and his dedicated team are driven by the goal of offering experiences and services that make guests feel as if they have found their second home. Through their collective efforts, they have achieved remarkable milestones, constantly raising the bar for guest satisfaction. Consequently, Jumeirah Al Naseem has garnered significant recogni- tion and accolades over the years, affirming its status as a destination of unparalleled excellence. “With Dubai ranked as the number one destination in TripAdvisor's 2023 Travel- ers' Choice Awards, we have witnessed a growing desire for exploration and travel, which has led to a success- ful first half of the year for our hotel. We are humbled by our surpassed expecta- tions across all performance indicators, showcasing our guests' renewed interest in creating unforgettable memories at Jumeirah Al Naseem. Every aspect of our guest's stay, from arrival to departure, is meticu- lously curated and looked after, enveloping guests in unparalleled comfort. As we look ahead, we confi- dently embrace the future, anticipating the potential for continued growth and suc- cess in the upcoming year.” Adds Azar. Sustainable hospitality has emerged as the most vital conversation in the industry today.
JUNE 2023 | HOTELNEWSME.COM With growing environmental con- cerns and a greater emphasis on social responsibility, adopting sustainable practices is paramount. Jumeirah Al Naseem upholds sus- tainable and inclusive practices across the hotel, including initiatives such as eliminating single-use plastics across their supply chain and implementing innovative food waste management systems, and incorporating smart building and guestroom management systems to reduce waste and energy consumption optimising energy usage across all properties. Jumeirah Al Naseem is also home to the Turtle La- goon, which monitors the progress and condition of rescued sea turtles before releasing them back into UAE waters. Together with Dubai Turtle Rehabilita- tion Project (DTRP), the hotel plays a crucial role in wildlife preservation by hosting regular workshops educating communities and guests on marine biology and sea turtles' local and global plight. They have saved and rescued over 2,000 sea turtles and look forward to releasing more turtles on June 16th to celebrate World Sea Turtle Day (an event adored by the hotel's little guests). A Hotel General Manager holds a pivotal role in ensuring the seamless operation and overall success of the establishment. Apart from possessing a comprehensive understanding of the industry and taking charge of strategic direction, policy establishment, and guest satisfaction, their leadership and decision-making skills play a vital role in driving profitability and upholding the hotel's reputation. According to Azar, a successful GM goes beyond personal achievements and focuses on the collective accom- plishments of their team. Creating an environment where every team mem- ber's voice is heard fosters a culture of open communication, empowering individuals to surpass expectations with engagement and creativity. Azar emphasizes that a GM's influ- ence is reflected in the harmonious coordination of operations, guest satisfaction, and the enduring legacy they shape. By demonstrating dedica- tion and compassionate leadership, a GM leaves a profound and lasting impact on both guests and colleagues, ultimately contributing to the hotel's long-term success. Good leaders, like Azar, recognise the immense value of empowering their staff. Understanding that a motivated and engaged team is essential, Azar fosters an environment of support, trust, and autonomy. By nurturing a sense of ownership and account- ability, he encourages his team to explore their creativity and embrace innovation. Through empowerment, staff members feel valued, leading to heightened productivity, job satisfac- tion, and overall success for the or- ganisation. Azar's deep understanding of the power of empowerment drives his commitment to cultivating a team that thrives and achieves remarkable results. COVER STORY HCNME “THE JOURNEY WAS NOTHING SHORT OF INSPIRING. JUMEIRAH GROUP HAS EVOLVED INTO A SYMBOL OF SOPHISTICATION, EMBODYING THE ESSENCE OF LUXURIOUS TRAVEL AND GENUINE ARABIAN HOSPITALITY."
HOTELNEWSME.COM | JUNE 2023 "I have the pleasure of working with the most capable colleagues. To keep the team motivated, we ini- tiated a series of initiatives; The Empowerment Pro- gramme enables colleagues to independently make de- cisions without relying on their line manager. Through training, colleagues gain the confidence to make sound decisions resulting in faster resolution of guests' inquiries. The SPARK Team Build- ing Programme is an inclusive sports activity that encourages camaraderie among colleagues through departmental competitions. It aims to strengthen the bond of the team and pro- mote cross-departmental interaction. Every month, we have our GM Communi- cations Meeting, an oppor- tunity to acknowledge and celebrate our colleague's contribution to the group's success and encourage open communication. Many colleagues are recognised throughout the year, sometimes receiving gifts that immerse them in the luxury lifestyle they offer guests. Lastly, we initiated Tawasul Events to build a professional community for UAE Na- tional colleagues seeking career guidance. During the event, colleagues can interact with me to address concerns and elevate their working environment. It provides mentoring oppor- tunities by their respective heads of Departments, resulting in career progres- sion, and some have suc- cessfully transitioned to working in the public and private sectors with excel- lent positions. As leaders, it becomes our responsibil- ity and privilege to foster the development of the upcoming generation of hoteliers. The hospitality industry is truly blessed, as it revolves around people and holds a promising future filled with endless potential." Navigating the delicate balance between profes- sional success and family life has its challenges, but for Azar, it has become a source of motivation in his role as a General Manager. Azar's professional drive is fuelled by a passion for tan- gible results, with a relent- less pursuit of embracing new challenges that offer unparalleled growth op- portunities. And while his career demands dedication and focus, he finds absolute joy and fulfilment in cher- ishing precious moments with his daughters, Thea, and Sophie, who are his ul- timate source of happiness. They hold the central place in his world, serving as the catalyst behind his deter- mination and the pride that propels his endeavours. FUELLED BY PASSION
JUNE 2023 | HOTELNEWSME.COM Their presence is a constant reminder of the importance of balance and the profound impact one can have on the lives of others. After spending a decade and a half with the Group, Azar has witnessed the brand grow from strength to strength first-hand. "Jumeirah Group holds a special place in the hearts of many as we celebrated the Group's 25th-anni- versary milestone last year, and since the inauguration of Jumeirah Beach Hotel, I have been honoured to witness the company's extraordinary growth and transformation. Today, it stands proudly as a pinnacle of luxury hospi- tality, with 13 exceptional properties in the United Arab Emirates, including breath taking beachfront hotels and distinguished city establishments. The journey was nothing short of inspiring. Jumeirah Group has evolved into a symbol of sophistication, embod- ying the essence of luxurious travel and genuine Arabian hospitality. It has also expanded its footprint across the globe, leaving a lasting mark on renowned destinations like Capri, the Maldives, Bali, and London. The distinctive fusion of luxury, comfort, and stun- ning surroundings that the properties offer continues to captivate travellers worldwide. Moreover, Jumeirah Group remains committed to strengthening its pres- ence in the GCC region, continually striving to extend its reach and influ- ence. At the heart of Azar's aspirations lies a relentless dedication to achiev- ing exceptional results alongside his team. This involves ensur- ing that each department operates efficiently and effectively, while continually seeking ways to enhance our services. Furthermore, I consistent- ly monitor the competition to ensure that we stay ahead and provide our guests with the best possible experience. This requires keen attention to detail and a deep under- standing of industry trends and demands. Our business is constantly evolving, and we must proactively stay ahead of the game. In addition, understand- ing what is important to the younger generation is essential. The values and philosophy of the younger generation have significantly evolved, and as a manager, I must adapt my management style to accommodate these changes. Simultaneously, I am responsible for the well- being and happiness of my employees, ensuring they remain motivated to deliver exceptional service to our guests. Hospitality is a 24-hour business that requires constant attention and care. Each day brings unique chal- lenges and opportunities, as I collaborate with people from diverse backgrounds and cultures, each with their own values and perspectives. However, at the core, respect and a shared goal unite us. As a dynamic individual, I find joy in exploring new opportunities and chal- lenges that come my way, even if it means adjusting personal plans or working on holidays. When did your career in hospitality start? My career in hospitality began at a young age while growing up in Zermatt, Swit- zerland, where my family owned a hotel. As a third- generation hotelier, I knew from the start that I wanted to follow in my family's footsteps. I was fortunate to have extensive travel experi- ences at a young age, which further fuelled my passion for the hospitality industry. I completed my educa- tion in Switzerland, earning degrees in Culinary Arts as a Chef and Sommelier, with top grades in my state. I continued my studies at the Australian International Hotel School in Canberra and later at Cornell Uni- versity in the USA, where I acquired valuable skills that have been instrumental in my career. Throughout my profes- sional journey, I have gained extensive experience work- ing for various small luxury boutique hotel operators before joining Hyatt and later Hilton. I embarked on my Hyatt journey in 1999 in Dubai and had subsequent opportunities in Muscat, Moscow, Doha, and Mumbai. Finally, I joined Hilton as the General Manager of the luxurious Waldorf Astoria in Lusail, Doha. How did you get selected for this position? I was selected for this posi- tion based on my extensive experience in the hospital- ity industry. Throughout my career, I have worked in luxury, upscale, and select service operations in both urban and resort environ- ments. Additionally, I have been involved in pre-open- ing processes and have over- seen the development and opening of several hotels in my capacity as an Area Vice President. 60 JUNE 2023 | HOTELNEWSME.COM W ith leisure travel returning to pre- pandemic levels, and Eid Al Adha as well as school summer holidays rapidly approaching here in the region, now is the opportune time for tourism, travel, and hospitality com- panies to start looking at how to reach summer travellers and potential guests. How? By creating personalised summer campaigns using AI-powered program- matic advertising. The right message at the right time Powered by artificial intelligence (AI), programmatic advertising is a data- driven way of buying and selling adver- tising spaces across all devices, markets, and channels in real time. It can be used across multiple touchpoints, including display, video, digital audio, connected TV and even digital out-of-home, which means travel and hospitality organisa- tions can reach their target audience whenever and wherever they are on- line. Programmatic advertising can also help them measure the effectiveness of their advertising campaigns, by provid- ing real-time data on impressions, clicks, conversions, and therefore, real business outcomes. AI-based technology allows travel, tourism, and hospitality marketeers to create personalised ads that reach potential guests based on a variety of factors, such as their interests, loca- tion, or even external factors like the weather. By connecting with customers who are more likely to be interested in their offerings, travel companies can increase the chances of conversion. Think about reaching potential guests in Australia who are heading into win- ter with summer vacation offers in the Middle East, or those in Europe after a week of summer rain with last-minute offers for a vacation in sunny Dubai. Dynamic creative optimisation (DCO) is one aspect of programmatic advertis- ing that creates each advertisement individually based on data available in real-time technology, meaning that an advertiser can send the right message at the right time to the right audience. 2023 summer travel trends and insights According to a study by American Express, a staggering 85 percent of travellers plan to take two or more leisure trips in 2023. The top trends this summer are experiential and sus- tainable travel. Seventy-four percent of global travellers care more about creating a travel experience that meets their expectations than about the cost, TRAVELLERS HOW TO REACH THROUGH SMART SUMMER CAMPAIGNS 85 percent of travellers plan to take at least two leisure trips in 2023, a great opportunity for advertisers to reach travellers with relevant offers through data-driven advertising TRAVEL & TOURISM HCNME BY TERRY KANE, MANAGING DIRECTOR MIDDLE EAST & AFRICA AT THE TRADE DESK
HOTELNEWSME.COM | JUNE 2023 which is particularly true for Gen-Zs and Millennials. Eighty-one percent of travellers worldwide state that sustainable travel is important, with 69 percent planning to travel sustainably this summer and 64 percent willing to consider less popular destinations to reduce environmental impact. These traveler preferences can be instrumental in building marketing strategies for travel offerings. For exam- ple, if an eco-resort or property offers a unique experiential travel experience, these are the right consumers to reach. Through programmatic advertising, marketers can create ads that speak to specific traveler interests that resonate with them. This in turn helps increase engagement and drive bookings. Leveraging the power of AI With the support of AI, marketeers can accelerate their campaign performance and maximise advertising budgets across channels, audiences, and inven- tory with real-time recommendations. As opposed to directly booked fixed campaigns, AI can identify the highest- value audience segments and reach the right consumers with precision. For example, The Trade Desk sees over 1 trillion ad opportunities per day – that’s roughly 13 million every second. To make sense of all that data, AI helps to surface the right ad opportunities, to reach the right consumers, at the right time. How Marriott achieved a nearly 300 percent uplift in bookings Marriott has been very successful in using programmatic advertising on The Trade Desk platform. By using DCO technology, Marriott was able to boost bookings attributed to its campaign by nearly three times, resulting in a 55 per- cent reduction in campaign cost. With the demand for travel on the rise and the need to stand out in an increasingly competitive landscape, travel organisations have a great opportunity to reach target audiences that are right for their brands and offerings by building a media strategy that capitalises on consumer interests and travel plans. Through programmatic advertising travel companies can leverage data and signals around consumer interests to better reach them in real time. HOW TO REACH TRAVELLERS THROUGH SMART SUMMER CAMPAIGNS
JUNE 2023 | HOTELNEWSME.COM T he holiday home industry is a dynamic sector that continually adapts to meet the evolving needs of consumers. Staying informed about industry trends is vital for remaining competi- tive and delivering exceptional service to clients. Here we explore some of the current trends in the holiday homes industry and their potential impact on the future. TREND #1 - Personalisation One significant trend in the industry is personalisation. Today's consumers seek tailored experiences that cater to their individual needs and preferences. To meet this demand, holiday home companies are offering customised ser- vices and amenities. This may include customising the interior design of the holiday home, providing personal- ised concierge services, and offering tailored activities and experiences. By delivering a personalised experience, holiday home companies can differen- tiate themselves from competitors and attract more clients. TREND #2 - Sustainability Sustainability is another trend gain- ing momentum in the holiday home industry. Consumers are increasingly conscious of the environment and seek eco-friendly holiday homes that pro- mote sustainability and reduce their carbon footprint. This could involve utilising renewable energy sources, implementing water conservation measures, and adopting effective waste management practices. By embracing sustainable practices, holiday home companies can appeal to environmen- tally conscious clients and cultivate a positive brand image. TREND #3 - Technology Technology also plays a significant role in shaping the holiday home industry. Consumers now expect tech-savvy solutions, such as smart homes with integrated systems that allow remote control of lighting, tem- perature, and security. Additionally, seamless online booking and payment systems, virtual tours, and augmented reality experiences are becoming increasingly important. By leveraging technology, holiday home companies can enhance the client experience, streamline operations, and strengthen their brand. TREND #4 – Health and Wellness Health and wellness is a trend that has been amplified by the COVID-19 pandemic. Consumers now prioritise holiday homes that promote health and wellness. This may involve offer- ing healthy meal options, providing fitness equipment, or organising well- ness retreats and activities. By cater- ing to the health and wellness needs of clients, holiday home companies can differentiate themselves and tap into a growing market. TREND #5 – Domestic Tourism Domestic tourism has also wit- nessed a surge in popularity in recent years. Holiday home companies can capitalise on this trend by promoting domestic travel and designing custom- ised offers and packages specifically for local consumers. This trend is expected to continue, and companies that cater to domestic tourism will be well-positioned for success. CONCLUSION In summary, the holiday home industry is ever-evolving, and luxury holiday home companies in Dubai must stay attuned to current trends to maintain competitiveness. Personalisation, sustainability, technology, health and wellness, and domestic tourism are all significant trends shaping the future of the industry. By understanding and adapting to these trends, holiday home companies can differentiate themselves, attract more clients, and position themselves for long-term success. 63 HOTELNEWSME.COM | JUNE 2023 WHO'S COOKING When did your chef career begin? My interest in cooking and food started from a young age. I have always been in and around the kitchen as a kid. Memo- ries, moments, and significant food events in my life began with a basic love of eating simple, nourishing food. This emotional attachment to cooking sparked my career over a decade ago in South Africa, the motherland. Shortly after, I found myself making my way up and working at WD~50 in New York City, which I would say kicked off my culinary journey. What was the inspiration behind Jailbird? It all started with a craving. Our team came together during COVID, the peak of culinary experimentation, and thought about great fried chicken cou- pled with a strong brand. We had tasted good fried chicken, but the market lacked great, flavourful, and well-exe- cuted fried chicken. I got in the kitchen to make some, and the rest is history. How do you remain competitive in the quick-service restaurant business? Remaining consistent is key. From quality, service, relationships, and work environment, the Jailbird team strives to maintain consistency in eve- rything we do. Over the years, we have built a community that ranges from our dedicated staff to our loyal clien- tele. Nurturing and maintaining these relationships is what keeps us going. Tell us about the menu at Jailbird? The menu at Jailbird is a clear rep- resentation of the brand. It is daring, bold, and unapologetic, offering more than just the sum of its parts. The sheer simplicity of the menu adds to its com- plexity. While designing the menu, we never shy away from experimentation and breaking norms. What are the three most ordered meals at Jailbird? The classic and OG Sando Melt, the Nashville Style, and the Korean BBQ tenders. What makes Jailbird unique? It all comes down to genuine care. The entire team, including every staff member and myself, has poured our souls into Jailbird. It is an understate- ment to say that this brand is home- grown. It has been carefully crafted by individuals who consistently push boundaries in marketing, operations, sourcing, cooking, and delivering. Colossal amounts of care have gone into Jailbird, which sets it apart. FOR THE LOVE OF FRIED CHICKEN Daring, bold, and unapologetic – a chat with Jailbird’s Chef Alexi Mostert “FROM QUALITY, SERVICE, RELATIONSHIPS, AND WORK ENVIRONMENT, THE JAILBIRD TEAM STRIVES TO MAINTAIN CONSISTENCY IN EVERYTHING WE DO."
JUNE 2023 | HOTELNEWSME.COM T he Middle East's food and beverage (F&B) manufacturing industry has been experiencing significant growth in recent years, and it is expected to remain on this strong trajectory. The fast-moving consumer goods (FMCG) market is projected to grow at a compound annual growth rate (CAGR) of 5.2% through 2026, driven by the region's diverse and rapidly growing population of more than 10 million people. The recent Ramadan season also depicted this with a projected leap in retail sales and consumer spending. As the demand for F&B products continues to rise, manufacturers in the Middle East are accelerating ef- forts to stay ahead of market trends while producing high-quality, inno- vative, and wide-ranging products to meet the evolving preferences of consumers. Product Innovation and Diversifi- cation Product innovation is a key driver for the Middle East's F&B manufac- turing sector – and increasingly so. A surge in tourists vacationing in the region, as well as expatriates mi- grating to the region, is fuelling this growing demand. Manufacturers are constantly seeking to differenti- ate their products to meet the evolv- ing preferences of consumers. This includes developing new flavours and textures while expanding to plant-based and vegan options, which is increasingly apparent with hotels and restaurants diversifying their menus to cater to this boom- ing segment. F&B manufacturers are looking for alternatives to animal-based fats and oils, food ingredients that improve their product profile, and ingredients that are heat-stable and suit the local climate – Apical has been at the forefront of product in- novation in this realm. As a leading producer of functional and specialty fats, its versatile product range made from sustainably sourced plant-based fats and oils offers the F&B FOCUS HCNME DYNAMIC MARKET TRENDS IN THE MIDDLE EAST'S THRIVING F&B SECTOR BY MICHAEL VAN SALLANDT, HEAD OF FUNCTIONAL FATS, APICAL
HOTELNEWSME.COM | JUNE 2023 same functional benefits as traditional animal-based fats and oils. Better Ingredients; Health- Conscious Population Recent data shows that 60% of consumers in Europe, the Middle East, and Africa (EMEA) have become more conscious about their health following the COVID-19 pandemic. As it relates spe- cifically to the Middle East, a survey found that 67% of the region's shoppers believe that they are now healthier when compared to the global average of 51%. To ensure manufacturers provide healthier food op- tions, many countries have taken various steps such as introducing regulations that limit the use of trans fat in food products, including the UAE. By developing a range of products that have zero- trans fats, Apical enables food manufacturers to obtain the same functional benefits as traditional fats and main- tain the desired functionality and taste of their products – while meeting regulatory requirements. When selecting palm oil-based food ingredients, partnering with suppliers that have been certified by the Roundtable on Sustain- able Palm Oil (RSPO) is crucial – it ensures that the production of the end goods meets strict environmental and social criteria. Rising Demand for Quality Substitutes Basic oils and fats, alongside specialised fats for bak- ing and chocolates, are key product segments for the Middle East. Many delicacies prepared by Arab households and expatriates regularly use such products as they play a key role in determin- ing the taste, quality, and presentation of food items. As such, it is rather normal to see a spike in sales for these product segments during Ramadan and have it hold steady throughout each calendar year. Cocoa Butter Replacer (CBR) in particular has seen strong demand from customers in the UAE and other GCC countries looking for high-quality ingredi- ents. Similarly, there is also great demand for Cocoa Butter Substitutes (CBS) in countries such as Egypt. Both CBR and CBS are cost- effective solutions that can replace cocoa butter without compromising on product quality or sensory attributes. Used in many food prod- ucts, including chocolates, confectionery, baked goods, and spreads, it is developed to mimic the same desir- able texture, mouthfeel, and stability of cocoa butter. Additionally, CBS and CBR enable manufacturers to cater to halal requirements in the Middle East as they can be sourced from halal- certified vegetable fats. Sustainable Sourcing and Quality Assurance In today's conscious con- sumer market, purchasing sustainably sourced products via a traceable and transpar- ent supply chain has become a crucial factor. The F&B manufacturing sector in the Middle East is increasingly recognising the importance of sustainability to address environmental challenges and meet consumer expecta- tions. By sourcing ingredi- ents from reputable suppli- ers and conducting thorough quality testing, they are able to meet regulatory require- ments, maintain consistent product quality, and build the trust of consumers. With its role as a food ingre- dient provider, Apical has an unwavering traceability- to-origin commitment and stringent quality control measures in place to ensure the safety and integrity of its products. Despite the complexities of a highly frag- mented and complex supply chain, Apical has achieved a 99.98% Traceability to Plantation (TTP), enabling manufacturers to rest as- sured that their ingredients are ethically sourced with evidence of the origin and journey of the ingredients. These traceability com- mitments also extend to Apical2030, a strategic sustainability initiative with ten time-bound targets across four strategic pillars, namely Transformative Partnerships, Climate Ac- tion, Green Innovation, and Inclusive Progress. Targets include a 50% reduction in GHG emissions by 2030, net zero by 2050, and partner- ing with communities to improve their welfare under the Sustainable Living Vil- lage program, among others. These commitments align with many of UAE's sustain- ability priorities, including the UAE Net Zero by 2050 strategic initiative. To excel in the FMCG space, manufacturers must continuously monitor the pulse of F&B market trends, cater to evolving consumer needs, drive innovation to meet their changing demands, and enter new markets to capture growth. DYNAMIC MARKET TRENDS 65 HOTELNEWSME.COM | JUNE 2023
JUNE 2023 | HOTELNEWSME.COM HCNME F&B FOCUS F ood delivery is becoming an integral part of a customer’s daily habits due to the convenience, and with the younger generation becom- ing progressively tech-savvy, ordering food online is more preferrable. At Lavoya, I have seen first-hand the accelera- tion of cloud kitchens in the Middle East, to meet this demand. To further enhance our brand presence in the region we have launched our first venue in Dubai this June for our leading Lebanese street food concept, Barbar. The Barbar cloud kitchen will be our pilot location and depending on its success, we will expand the concept across the remainder of our portfolio in the coming months. The rationale be- hind adopting the initiative comes after already estab- lishing flagships stores for each of our three brands. We recognised the ongo- ing demand for delivery service and understood the benefits of expanding our brand operations without a physical dine-in location for customers. Overall, the future of cloud kitchens looks promising. The con- cept is highly cost-effective as it eliminates the need for expensive real estate, rent, and utilities associated with traditional brick-and- mortar restaurants. They are also convenient ways for restaurants and businesses to expand their reach across the region. Taking this into account, the format does come with certain challenges. Efficient management of operations, from preparing food to the correct handling of deliver- ies, is crucial and businesses must invest in the right technology and systems to successfully streamline these operations. At Lavoya, we continue to ensure we have the latest technological advancements to competent- ly handle processes, and we are committed to using low- waste production techniques driven by technology. The UAE market has seen an increase in its level of digitalisation and popular- ity of food delivery, making it an ideal market for cloud kitchen expansion. As the concept gains popularity, we have an opportunity to dif- ferentiate ourselves by pro- viding a unique, high-quality customer service, however, it is important to note that brick and mortar restaurants continue to thrive due to the irreplaceable experience that encompasses more than just food, including the physical presence and atmosphere a restaurant brings. Physi- cal restaurants provide a multi-sensory experience that cannot be replicated through a screen alone. The ambiance, decor, and overall atmosphere play a significant role in creating a memora- ble dining experience for customers. At Lavoya, we recognise the importance of both cloud kitchens and physical restau- rants. While cloud kitchens are ideal for customers who prioritise convenience and speed, physical restaurants offer a more immersive experience for those who want to savour their meal in a welcoming atmosphere. Combining the two through a hybrid approach enables businesses to reach a wider range of customers and di- versify their offerings. This integrated approach ensures that customers have the freedom to choose the dining experience that suits their needs and preferences at any given time. For example, a customer might order a meal from a cloud kitchen for lunch when they are short on time, but then choose to visit the physical restaurant for din- ner with friends or family to enjoy the ambiance and the full range of menu items. Alternatively, a customer might visit a physical restau- rant and then order from the cloud kitchen for takeout on another occasion. In addition to enhancing the customer experience, a combined approach also offers operational benefits for businesses. By utilising a cloud kitchen, businesses can optimise their operations by fulfilling orders more ef- ficiently, reducing wait times and improving their delivery capabilities. Physical res- taurants, on the other hand, offer the opportunity for businesses to create a brand presence and establish a loyal custom base through memo- rable dining experiences. The fast-paced lifestyle and growing demand for conveni- ence has also contributed greatly to the popularity of cloud kitchens operating in the region. However, in markets where food delivery services are not as popular, cloud kitchens may face the challenge of gaining accept- ance. In conclusion, the Middle East is witnessing a surge in cloud kitchen adoption, and Lavoya is committed to lev- eraging this trend to expand our reach and improve our overall operations. However, finding the right balance between cloud kitchens and physical restaurants is crucial in offering custom- ers a comprehensive dining experience. By leveraging appropriate technology, ro- bust systems, and a strategic approach, both cloud kitch- ens and brick-and-mortar restaurants can co-exist harmoniously and flourish within the Middle Eastern market.
